Beef jerky!

This is just the first batch since my dehydrator couldn't handle all of the beef in one go.
 
Do you use a food saver sometimes?
The jerky looks very tasty!
I don't have a food saver, but I'd love to get my hands on one! For now we use ziplock bags and press as much air out as we can. Luckily the jerky never lasts long, so I've never had to test exactly how long it'll store for.

Natural Pectin Peach Jam

For some reason I have a terrible time with jam made with Sure-Jell or Certo but when I make natural pectin jams with nothing but fruit, sugar, and maybe a lemon to add extra acidity I get terrific jam every time. Go figure. 🤷‍♀️

I really should write down my natural pectin method.

If you can find any really OLD cookbooks you should be able to find recipes for natural pectin jams. I read a lot of those and then worked it out by experimentation.

You get less jam for the same weight of fruit but it's tastier.
