I made enchiladas for dinner yesterday and broke out the camera to take pics. It's a very easy recipe, hardly a recipe at all in my mind. But folks love them and always ask me how to make them, so it must be worth sharing! These freeze beautifully before baking, so double the recipe and keep a pan on hand for really crazy nights, or to gift someone dinner when they're having a hard time.

You'll have to let me know if you try it! I haven't actually made it for anyone but my DH and kids, and while I've given the recipe to ONE person, I never did hear back if she tried it or not. If my 20 year old son finds out I'm making it though, you can bet your bottom he'll be over in a heartbeat! it's goooooood!
