Chicken and Dumplings.
You just need carrot, onions, celery.
Chicken, shredded.
Chicken broth. 2-3 cans
Biscuit dough
Poultry seasoning
butter and EVOO
flour
Melt 1/4c butter in a large skillet, add about the same amount of EVOO. Add 1/2c flour stir to make a paste. Add 1 can of chicken broth slowly. Stir it will be thick. Add 2 or even third can. It will thicken as it cooks.
Add finely chopped carrots, celery and onions.
Season with poultry seasoning and salt and pepper to taste.
Add chicken. Let cook til vegatables are tender, won't take too long.
Make dumpling dough, either box or homemade.
Add cover and cook.
