Yeah that is a good way to use up leftover chicken, but we just had those a few days ago when I was using up some leftover beef. Thanks...

you dont put the soup on the dressing you put the soup in with the shredded up chicken then put the dressing on top of it and bake it it is wonderful everyone around here loves it. my mother in law takes it to every church dinner we have and my oldest dd that is all she wants to eat for her b-day we also do this with left over turkey. it is very good
1 (6 oz.) pkg. Stove Top chicken flavor stuffing mix
1/4 c. butter
1 1/2 c. hot water
1 (10 3/4 oz.) can condensed cream of chicken soup
1 c. milk
3 c. cut-up cooked chicken
1 (10 oz.) pkg. thawed mixed vegetables

Heat oven to 350 degrees. Place contents of vegetable/seasoning packet (from stuffing mix) and butter in a bowl. Add hot water. Stir in partially melted butter. Add stuffing crumbs. Stir gently to mix.
Mix soup and milk in a 2 quart casserole dish. Stir in chicken and vegetables. Spoon stuffing over chicken mixture. Bake for 45 minutes or until hot and bubbly and brown.

When I make chicken pot pie I mix chicken, mixed vegetables, cream of chicken soup (but mushroom would also be good) seasoned to taste. I have used veg all type canned and drained or made up my own mix or used frozen mixed veggies and microwave them until partially cooked first. Mix in a baking casserole.

Crust: Melt 1 stick butter/margarine in bowl. Add 1 cup self rising flour and 1 cup milk. Mix well but not until all lumps are gone. Pour over the chicken mixture and bake at 375 until crust is brown.

I think this fits in with your ingredients and the topping is biscuit like in taste. I have used 1/2 cup oil instead of the butter.

thanks redhen it is very good.our whole church and alot of other churches and alot of people around here love it . It stretches a little chicken along way and makes a whole meal. there is also another way we fix it sometimes
chicken
egg noodles (cooked)
cream of chicken soup
mixed veggies
combine all ingredients
bake in 350 degree oven for about 35 min you can also omit veggies and use broccoli and add cheese

When we have leftover chicken we will boil
some pasta, add a can of English peas, and a can of rotel tomatoes.
We do all of this is a big (8quart) saucepan on the stovetop and
start adding cheese(we use velveeta) and keep stirring until the cheese is
melted. You can use cheddar or other cheeses but whe we use those
we add a little milk to the mixture so the cheese get creamy as
it melts.
After the cheese gets melted good we either serve it then or put
it in a casserol dish and top with breadcrumbs and put in the oven on 350
until the breadcrumbs have browned. (You can make this with or without the rotel)

Chicken and Dumplings.

You just need carrot, onions, celery.
Chicken, shredded.
Chicken broth. 2-3 cans
Biscuit dough
Poultry seasoning
butter and EVOO
flour

Melt 1/4c butter in a large skillet, add about the same amount of EVOO. Add 1/2c flour stir to make a paste. Add 1 can of chicken broth slowly. Stir it will be thick. Add 2 or even third can. It will thicken as it cooks.
Add finely chopped carrots, celery and onions.
Season with poultry seasoning and salt and pepper to taste.
Add chicken. Let cook til vegatables are tender, won't take too long.
Make dumpling dough, either box or homemade.
Add cover and cook.

Thanks everyone for some great recipes that I will be adding of my files.

I ended up making a chicken and rice dish. It was ok, they ate it but it wasn't anything to write home to mom about. I won't be making that one again. Oh well, at least I got one more meal out of that chicken and there will be enough leftover
to feed the dogs. Save myself a few bucks on dog food today. The freaking dog food has gotten so expensive lately that it costs less sometimes if I just cook enough to feed them what we eat. They like what I cook better anyway.
