OK all you country cooks I need some help...

my grandmother always made chicken and spaetzle.
whip up a couple eggs with some water and flour, like a thick batter. boil your chicken with maybe some onion and celery, boil the heck out of it. pour the batter into boiling soup slowly while stirring gently, should be done in about 8 minutes. good recipe for winter.

Dont want to steal your thread....but last night I made the stewed potatoes that was suggested. OMG--we ate them all up! They are different but so good. I boiled the potatoes with a few cloves of minced garlic and then gave them a good shot of pepper and sea salt when they were done. We served them with a chuck roast I had tossed into the slow cooker with a packet of good seasons dressing mix ans 8 0z of mushrooms. Added some veggies from the garden and it was a delicious meal!

Here's another one:

Chicken Enchiladas

3 baked chicken breasts (I'll use left over chicken too.)
1 pkg (10) flour tortillas
3 cans cream of chicken soup
1 can chopped green chilis
1 cup sour cream
3 cups Monterey Jack Cheese
3 cups Sharp Cheddar Cheese

Bake chicken breasts
In a large sauce pan mix over low heat the soup, chilis, sour cream and cheese.
Shred chicken meat and add to the cheese mixture.

Now you can do this part 2 different ways.
Warm tortillas, spoon about 3T mixture and roll up the tortilla.
Place in a 9x13 greased pan.
Continue until dish is full. Spread rest of mixture on top and bake at 325 degrees for 25-35 minutes.

How I do it is I grease the 9x13 dish and lay enough totillas to cover it completely so no part of the bottom or sides are showin. I heat the tortillas first they lay better.
Spoon in half the mixture.
Top with the rest of the tortillas.
Top with the rest of the mixture.
Then bake for the same amount of time.

My family loves it.
 
OPTION #1
chopped , cooked chicken
8 oz sour cream
1 can cream of chicken soup
1/4 cup chicken broth
mix in casserole dish and top with crushed ritz crackers. bake at 350 for 30 min
serve over rice

OPTION #2
1 can cream of chicken soup
1 can cream of mushroom soup
1 packet lipton onion soup mix
3 cups warm water
1 1/2 cups rice
Mix all together in a cassreole dish
lay pieces of chicken on top of the mixture and bake at 350 for 1 hour (+/-) until rice is cooked

Option #3
chicken salad
chopped cooked chicken
mayo
pepper
sweet relish
and pretty much whatever else you like that you want to throw in there

Boil up some egg noodles, add chicken, & a pack of Lipton chicken noodle soup mix. YUM!!!!!
