ok i need a really good left over turkey recipe

i bought two turkey breast i stuffed them with garlic,onion,and bell pepper and injected them with cajun butter flavor injector
it was really good
but i have a gallon size bag of boneless turkey breast left over
does anyone have a really good recipe that i could have
i thought turkey pot pie but my hunny wont eat that and i am from cajun country so besides gumbos,stews,fried stuff and red beans i am limited to what i know to cook so any help would be great

CHICKEN ALA KING

1/4 c. butter
1/3 c. flour
1/2 tsp. salt
1 c. chicken broth
1 c. milk
2 c. chicken, diced
1 (3 oz.) can mushrooms
1/4 c. pimento, chopped
1 (16 oz.) bag frozen peas

In a saucepan, melt 1/4 cup butter (or substitute chicken fat). Blend in 1/3 cup flour in 1/2 teaspoon salt. Add 1 cup chicken broth and 1 cup milk all at once. Cook, (stir constantly until sauce is thick and bubbly). Add 2 cups diced and cooked chicken, drained mushrooms and chopped pimento. Stir in above ingredients and add cooked peas. Heat thoroughly and serve over noodles or toast. Enjoy.
 
CHICKEN ENCHILADAS use turkey instead of chicken

6 chicken breasts, cooked, cut into 1" pieces
1 onion
2 tbsp. butter
2 16 oz cans Old El Paso Enchilada sauce
1 4 oz can tomato sauce
16 white corn tortillas
2 c. cheddar cheese, combined with 2 c. Monterey Jack cheese
1 chicken bouillon cube (in 1/4 cup liquid)
1 c. stewed tomatoes
1 tsp. garlic powder
1 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. chili powder

Slice the onion and saute in garlic and butter. Add the dissolved bouillon cube, tomatoes, Enchilada sauce, herbs and seasonings. Simmer over low heat.

Fry the tortillas in 375 degree oil for a short period (about 1 minute).

Remove tortillas and drain on paper towels. Dip in sauce when cooled.

Fill each with chicken and cheese and roll up, placing seam side down in 9 x 13 x 2 inch pan.

Pour remaining sauce on top and sprinkle with cheese.

Bake at 350 degrees for 30 to 40 minutes.
 
pepperoncini fettucini:

cook fettucini noodles as directed on package (use salted water)

lightly warm finger size chunks of turkey in butter and garlic.

add about 1/2 cup sliced peperoncinis and 1/2 cup sliced white onion and warm.

add small carton of heavy cream, stir constantly until hot but not boiling.

add 1 cup shredded parm and stir until melted.

remove from heat and let thicken for about 5 min.

season with janes crazy mixed up salt (if needed leftovers are usually already seasoned)

pour over pasta . . . be ready to love me!
 
i was going to say enchiladas... there is just something about turkey and mexican food!

turkey and noodles??

cold turkey salad (like chicken salad but with turkey)

we are baking the other half of our turkey breast tonite with corn pudding and 'taters

yum!
