Okay, I "aged" my eggs and they still won't peel

Quote:
I have one of these that I use occasionally to fully cook a few eggs. It's quicker than doing a full pot of water on the stove.

She's 'called Henretta Hen' just the product name (I'm not crazy & name my kitchen appliances

). It whistles when they're done. I like to let mine sit in there unplugged an extra few minutes because we like fully cooked firm yokes. There are a few on ebay I seen so they're available there anyway. One was even up to $41.00 That's Nutts.

But Yes they're made for eggs, making either steamed (boiled) eggs or it has a container for making poached eggs.

I put my eggs in the pan right out of the fridge, cover them with water (warm or cold, either way), add a shake or two of salt. Cover, bring to a boil quickly, boil a minute or so, shut off the burner, leave the eggs in the pan, covered until the water cools enough to handle. My impatience always gets the better of me, though and I tend to rush it a bit.

DUMP the eggs out of the pan into the sink with the cold water running. Cracking the shells is my goal with this part. I make sure the shells are cracked on each egg and replace the eggs into the pan, covering them with COLD water out of the tap.

By this time, I've acquired a kazillion other things to do and will totally forget about my eggs until hours later (sometimes). When I remember them, I drop them into a ziploc bag (note the carelessness I've shown them so far) and put them in the fridge.

THE NEXT DAY they peel with ease. Once in a while I have a stubborn one that doesn't want to let go of it's shell, but these are few and far between. I always boil one day and peel the next day after a night in a bag in the fridge. I realize, though that not everybody has the luxury of doing it this way. I AM a bit 'odd', I admit!

Start your fresh from the hen eggs in cold heavily salted water, bring to a boil, cover, remove from heat and let set for 15-18 min. Then I put the pot under cold running water while shaking the pot to crack the eggs. Leave in the water until they cool off and they always peel easily. Does not matter if the eggs are straight from the hen. I never put my eggs in the fridge.

Not to get too scientific but, lets look at a few things. Adding salt to water simply 'softens' it, like a water softer. Also, salt water boils at a much higher temperature than fresh water. So, maybe boiling the eggs a little longer will have the same effect..? will have to try.. Also your local water suplly in your area will therefore have an affect. Anybody tried bottled or ditilled water? Curiuoser and curiuoser....
