Those are vents that can be open or closed to adj. the humidity in the unit.

On the dial type of thermometer it can be checked in a glass of crushed ice. Ice melts at 32 deg F so when the hand settles it should be at 32. If it is not there is a hex at the top of the stem that you can gently grasp with pliers and then holding that fast you can turn the dial till it is set to 32.
 
NNbreeder, do you use ice water or just pure ice. It seems at work they use ice water but i dont work with cooked meat so I dont pay attention. So can i put the ice in a blender, hit crush, throw it in a glass and wait till the ice starts to melt, or any time? Then adjust the dial? It is reading a little higher than the digital hydromter inside the unit. It will probly take some tinkering but im sure I can get the unit running a ok with your assistance and patience

If you read on the bottom of that auction where it says "seller added addition info or something like that' it says the starting bid was suppose to be 60.00 not 6,000.00 so it was reposted lol. He got a little anxious.

I think the front Wafer is out. I adjusted the one a little lower on the unit and the light kicked on. The temp jumped up 6 degrees to 102. Im gonna try to lower it. How hard is it to replace a wafer tstat and do I need just the wafer or the hole shabang?
 
Byrd i just ran out in the storm about 30 minutes ago, my started chicks was out in a pen sleepin in the corner. They was gettin soaked. I got them inside in a dog carrier with a heating pad underneath to help dry them out.

The 1202 is at 101.1 gonna barely move the wafer stat and try to even it out at 100. My 1588 usualy runs at 101.5 and does great.
