Evening all. I am in the house with my chores done. Guess all is well, I had a busy day today after my meeting I braved Walmart for my angel tree gifts. I always feel good doing that. Turned the one in for the school today and will turn the other in at church on Sunday. I picked a boy & a girl that had clothes on list. I also got a small toy for each. Now to get Christmas finished for my kids an family. Sunday night we will make our soup mixes, my thing for this year. Last year I did picante sauce & BBQ sauce.

I plan to get to bed early tonight cause 4 am comes early but I sure am looking forward to seeing everyone. If any of you IHOp folks see this, be sure to flirt with the waitress so she will keep the coffee coming until my eyeballs look focused ok??

So I would love to try your recipe. Since Jeannie mentioned them earlier I have been starting to crave them.

yea I have molasses up the crazy and was like hmmm what can I bake today... ahhh haaaa Ginger Cookies... and yes they are softer than snaps... Mine come out tasting different than those that use All Purpose Flour since I mix my APF with some flour I made using the Grain Mill... of course I then explain to the family ok guys remember this will taste a lil different since I mixed the flours..lol

Here is the recipe, sorry I didnt see the request for it earlier, I was on and off the computer. Hey and look it takes a CHICKEN... as to keep in company with the thread this recipe uses EGG ....LOL...



SOFT GINGER COOKIES

3/4 Cup of butter, Softened ( I use unsalted real butter)

1 Cup of Sugar

1 Egg

1/4 C of Molasses

2 1/4 C of All Purpose Flour

2 Tsp of Ground Ginger

1 Tsp of Baking Soda

3/4 Tsp of Cinnamon

1/2 Tsp of Ground Cloves

1/4 Tsp of Salt

Additional Sugar
++++++++++++++++++++++++++++++++++++++++++++++++++++++++++

In a large bowl, cream butter and sugar until light and fluffy

Beat in egg and molasses

Combine the flour,ginger,baking soda,cinnamon,cloves and salt.

Gradually add to the creamed mixture and mix well.

Roll into 1 1/2 inch balls, then roll in sugar.

Place 2 inches apart on un-greased baking sheets.

Bake at 350 degrees for 10-12 min or until puffy and lightly browned.

Remove to wire rack to cool. Yields roughly 2 1/2 dozen.
 
I hope everyone going to the show this weekend has a good time. Take lots of pictures to share with the rest of us who can't go. When everyone gets back, let's start talking about a POOPS get together for the spring or summer. I'm feeling left out.
