When a yolk starts to separate when you crack it open ,does that mean the egg is old and should not be eaten?

Not always. It could just be a weak yolk wall from an incorrect nutrition balance in feed or the egg was made too quickly by the hen. Giving too many treats, having old feed, beginning or end of egg cycle, or recovering from illness or molt can all do this. The best way to tell if an egg is bad is to do the float test. Use water at least 20f over what the temp of the egg is. If the egg is flat on the bottom then it is less then a week old, if it touches the bottom but has the fat end up then it is older but still good, if it floats then it is bad.

Thank you for the information . My next question was is the egg bad?

There is no way for me to tell because I couldn't smell it. You just know by the awful smell when opened if it is bad. I take it you have never smelt it before but it is a cross from sulphur and roadkill. I found the chart one of my friends posted:
