I would recommend the Silver Appleyard. No matter what, ducklings do go through a spaz phase. The Silver Appleyards are slower moving and very food motivated, yet are great at foraging for insects and I've seen them eat a mouse and frogs.
Pekins might be another good option. Also easier to get rid of extra drakes of heavy breed ducks.
