OT...What should I do with a bunch of cream cheese?

A side dish we make:

Pack of egg noodles
chopped green onions
cream cheese
cheddar cheese
You can also add a meat like chicken, tuna, or hamburger if you want it as a main dish

Boil noodles till almost done...drain. mix cheeses and green onions together...Add noodles. Put in baking dish and bake at 350 until edges are browned and center is hot and melted.
I don't have precise measurements very often when I cook because I usually just throw it together to taste.

Also:

Cut top off banana peppers and clean seeds out. Fry and crumble mild sausage. Mix cream cheese, cheddar cheese, and sausage together. Stuff peppers with mixture. Roast/broil or grill until done.

Chicken enchiladas. Mix cooked, shredded chicken with cream cheese and taco seasoning. Put in in tortillas, top with enchilada sauce. Or do it in layers, like lasagna, with cheese, chicken, blackbeans, salsa and cream cheese. If you do it the lasagna way, it freezes well....yeah, I know you have freezer issues.

Cake mix cookies

1 cake mix
3 oz cream cheese
1 egg
1/stick of butter

Soften the butter and cream cheese. Mix them together. Beat in one egg. Add the cake mix. Cookies can be rolled and cut out or they can be dropped by the spoonful. Any flavor cake mix can be used. You can add chips, nuts, etc. Bake on a greased cookie sheet for 10 minutes at 350 degrees. Chocolate cake mix with chocolate chips added is particularky good. My daughter's favorite is strawberry cake mix with pink frosting. White cake mix makes real good cut out sugar cookies at Christmas.

QUICHE!!!!! The best quiche recipe I've ever tried! It's so rich!
Basically you just mix whatever you want in your quiche (ie. cooked broccoli, onion. bacon) into softened cream cheese and shredded cheese.
Pour a lightly beaten egg(2-4) and lil bit of milk mixture into it.
Add whatever seasonings-I like to use a little rosemary;)
Combine all of that, pour into a par baked, pre made pie crust and bake away!

I haven't read the thread yet, but this is what I'd do:

8 ounces c.c.
8 ounces butter
2c flour

Knead until smooth, chill then roll thin. You can shape the thin dough into shapes, dot with preserves and roll or fold up, then bake until golden. It's also good with savory fillings -- think cheese and bacon or spinach and garlic type stuff. Yummy!

I manage a restaurant that closes 2 months out of the year. We try not to over order when it gets close to closing time, but something just last forever. Like lemons, onions, taters, oranges, buttermilk, heavy creams, etc. You get the idea. I'm in the middle of making a peanut butter pie recipe one of you suggested. If it turns out good, I'll make quite a few more for the neighbors. I'll post a pic when I'm done with it

Best no bake cheese cake ever
2 8 ounce cream cheese softened
1 tsp vanilla
1/2 cup sugar
2 cups sour cream
1 container cool whip
1 9 inch graham cracker crust
soften cream cheese and blend with sugar add vanilla
fold in sour cream then fold in cool whip pour into pie shell.
I use a can of cherries to top this cheese cake but you can use any kind of canned pie filling.
This uses both cream cheese as well as sour cream .
