Do you water bath and pressure can or just pressure can? I use a ton of canned tomatoes throughout the year and would love more than anything to never have to buy them. Do you can all varieties (diced, whole, sauce etc)?
I'm wondering the same. I love tomatoes that are canned

We can a lot of our vegetables, do some pickling and mostly make a basic marinara sauce. I more or less follow the ball canning guidelines on whether to pressure or water bath canning.
 
Do you use a recipe you found or one of your own? Do you do all types of tomatoes?

My recipe is just tomatoes and salt, remove the skins with boiling water, puree the tomatoes, then waterbathe. I like early girls and big boy tomatoes. Sometimes I make pasta sauce and can that, but usually I just can the tomatoes.

Great, thank you. I've had good luck with early girls. I'm going to try some beef steaks in the garden this year, I think.

Good to know. I bought the big Ball book last year, lots of information in that thing! Too much apparently, because I didn't do any of it :oops:

Haven’t read the whole thing yet but plan to.

But I’ve grown peppers, tomatoes, squash, eggplants, green beans, all kinds of stuff really hah haven’t had much luck with the squash for some reason but everything else I have.

Though last year (so weird saying that lol) I never staked anything so I didn’t get many tomatoes. :lau

But I grew a bunch of different varieties and they all did well.

I usually grow peppers in pots just because I find they do a lot better. I did grow a bunch in the ground too, I only had two potted plants this year, but the in ground ones didn’t do that well.

I actually saved the two potted ones and am keeping them indoors for the winter. Peppers are technically perennials but most people grow them as annuals and I usually do too but decided to try overwintering them this year. Going well so far. And now because they’ll already have leaves and stuff, they should get right to producing fruit haha
