Thomas, sounds like a smaller less demanding turkey breed would be a much better fit for you than production whites you were looking at.

Also, it's hard to give you feeding advice since we here in the USA have no idea what's in the poulty feed in your country. Our advice was based on what's in our feed. In the USA our chicken scratch is mostly corn. Which would be a terrible stand alone feed for turkeys.

This is your statement and you have not provided any proof of it. I highly doubt that you have any idea how much lysine and methionine those turkeys are getting.
The American Bronze can't thrive in such hard conditions.

In Greece the commercial turkey feed contains GMO soy. I will not use it to my turkeys.

That is your choice. Personally I have nothing against GMO since it is not the evil thing that some people make it out to be. It is my preference to not feed soy because of how many people have allergies to soy.

Your conclusion that all American turkeys are fed proper pampered diets is wrong. Your belief that providing turkeys with an improper diet makes them a better turkey is also a false belief.

The wild turkey (bronze turkey) in America free ranges without any supplemental feed provided and is a thriving population. There are also many cases of domestic heritage turkeys that have gone wild or joined wild flocks and done fine without any supplemental feed.

Again I remind you that there is only one breed of domestic turkeys. Your Greek Bronze is nothing more than a heritage Bronze variety.

Thank, Mother Nature, I am so lucky.
I found turkey feed in a city near my town and it doesn't contain GMO products.
It also has vegetal coccidiostats.
I will go with broad-breasted whites.
I will give them turkey feed from day 55 to day 155 and then turkey feed, chicken scratch, free-ranging and dog feed (boiled deer and rabbit) once a month.
 
I will choose the broad-breasted white variety for my basic one, because of its size, fast development, calm character, and friendly temperament, the greek bronze for eggs (egg machines), the royal palm for free-range instincts and pest control ability and the bourbon red for broody tasks.

But, mainly the broad-breasted white.
