Peeling fresh boiled eggs

What is the secret to peeling fresh boiled eggs? My wife has made deviled eggs for years for most of our family functions and now that we have chickens we were excited to try deviled eggs made from fresh eggs. Unfortunatly after these things are boiled they are very hard to peel. The whites look kind of ragged when she is finished. Hopefully some of you will have a suggestion, if not, the fresh eggs are still the best no matter what they look like!

One day I boiled fresh eggs for a few minutes and then had something come up that needed attention. I took the eggs off the heat, but left them in the pot in the hot water. 15 minutes later, I went to peel the eggs and they peeled easily and cleanly. This has worked for me ever since.

Yes, there is sometimes a very thin discolored layer on the yolk. The discoloration disappears if you smash the yolks like you would for deviled eggs and is not noticeable in egg salad. At least that is my experience.
 
Everyone tells me to shock them in cold water right away after boiling. I have found however that it really doesn't matter but the age does. The eggs have to be a few weeks old. Think about how old grocery store eggs are when you get them. Up to 45 days old.
 
I take a small pin and poke a hole on the fat end of the egg. Get the water boiling, put the eggs in, 12-13 minutes later, put them under cold water. Peel perfect every time.
 
I had the same problem. Like mentioned above, adding the eggs to boiling water then putting them directly in ice water after cooking works like a charm.

I have boiled eggs gathered the day before using this method. I shell them while they are warm and they come out every time.
 
The long boil method is Best!
I used it on just-gathered eggs, didn't bother to salt the water but let boil for 10 minutes (4 eggs).
Then drained the pan, refilled with cold tap water and let sit just a couple minutes, eggs were stil lwarm when I peeled them.
Shells came right off and no yucky gray ring around the yolks.
