Peeling fresh works

I gather my eggs rinse them then put them in salted water to cover then add about a tablespoon of vinegar. Then I turn on the heat.
I boil them for 9 minutes (for hard boiled) then drain off all water. using cracked ice I put enough to "snuggle" all of the eggs for about 30 minutes.
the trick to peeling perfectly is to strike them HARD on the counter at the fat ot air end of the egg, this forces the air to help separate the shell and membrane. I then crack all around and peel using the SIDE of my finger NOT the nail. As the egg dries a bit dip it and/or your finger in a shallow dish of water. I have had 99% success with this method on that mornings gather.
