Pekin Eggs - Eating Them - Nutritional Value

Hi All - I know many here are breeders of ducks but we have two females as pets and they are now laying 1-2 eggs per day. I did a bit of reseach on the internet and see that they are good to eat ... we tried the first ones today and they really do not taste any different than chicken eggs but have a stightly stiffer texture as I believe there is more protein in the whites and more fat in the yolks. The question is this ... does anyone know the nutritional values for Pekin eggs and should they go straight in the refrigerator after collection? Do not know how store bought eggs are processed but imagine things are different for those we collect out of their pen each morning. Thanks so much.
 
Duck eggs are higher in fat, because they have a larger yolk. I believe they are higher in protein, also.

I rinse mine off and put them into the fridge. They won't spoil sitting out on the counter and are still good for weeks, but I find if there is any odor on the outside of the shell, it will soak into the eggs after a few days of sitting out and being warm.

If you do any baking, try the duck eggs in your baked goods. They are wonderful for baking.
 
Thanks so much .. felt a bit strange eating them at first but I guess if they are going to produce them the least we can do is use them.
