hardest part for me is slowing down to show what I am doing,,, I am used to having an assembly line thing going and you have to keep moving so you do not get backed up.

Offer stands for the seasoned pro's also, that just need the use of processing equipment,,,,,I find it interesting to watch others,,,no matter how long I have done you will always spot little differences with others that just might work for you.

I wish I had someone to show me how to process chickens. I watched a lot of YouTube videos. It was hard the first time but with practice it went faster. Fresh home grown chicken is so much better tasting than store bought.

I've been away from custom processing for 20 years now and am not as speedy as I used to be. I still do anywhere from 50-150 a year, but it's usually not more than 5-10 at a time and sometimes just one for the table whenever we want one.

just curious, because everyone says I do it backwards (whatever works) when you are cutting up for pieces, do you remove wings and thighs first, (apparently you are suppose to).....I find it easier to half them and then cut wings and thighs from the half,,,that way I can just leave some halved for the grill also......I also get nice straight, clean cut backbones that still have a little meat for stock this way...

I am not sure about the peas....but made me think about planting some stuff in my garden that I can give to them for something different and would be pretty much free other then my time! (Which I love being out in my yard and garden.....I cant wait for SPRING

) Any idea on what to plant?! My girls never really bothered my garden or my strawberry patch! I would find them sitting in there but nothing was ever missing or eaten!
