The processing is done. I think I get at least a C... I hope! LOL! Getting into what I was saying to Fisherlady made skinning easier. I just ripped that skin right off! Not that I should have done it, but it was easier!

Six boys got done. There is one that has gotten leery of me. He will probably live until the next batch. If not, I think I can get the job done now.

Goodness! I began with cutting them up, but in the end, I left them as big as possible. Less work, and they don't soften as much. I used some for french fries. I did still cut smaller pieces to pack around the huge chunks.


We've had the kids helping a good bit. We picked up an apple peeler and they love using that. That, and I have 2 canners going. While one is on the stove, the other cools and gets reloaded. It's been working well. Did you overload yourself like we did lol?

It was my first pressure canning experience a year ago. I don't really eat potatoes, but had a 20 pound bag.
I will be canning these birds tonight or tomorrow.
 
Well I am ready to make homemade pickles we canned them before but it made the pickles so soft we threw them out cause no one would eat them soft. And so now we just heat the jars lids in boiling water and put the pickles in the mix in the jars take our the lids put them on the jars and set them on the counter to seal.

It was just a good excuse to get to visit with you, the butchering lesson was the fringe benefit, lol
 
Thanks, but I don't feel like I did anything. I almost feel like I had subliminal messages. I can go out tomorrow, and kill the escapee rooster without thinking about what happened today. We may have processed roosters, but I'm still trying to process what I processed! :lau

You did a lot today, and can be proud of how well you did. Learning to process isn't a 1 and done kind of thing, it takes practice and repetition and learning how to make it work best for you. You did all of the hardest stuff today and I have no doubt you will be able to do a bird on your own when needed.
The coop will be much more peaceful tomorrow!
