Hardness plays a big factor in edge retention, but I don't know what types of steel specifically are better or worse from a metallurgical point of view. I do know that these inexpensive "ceramic" knives are pretty much done, and I have a new Chef's knife and a granton edge (scalloped) chef's knife coming tomorrow. Both are Mercer. They're nothing fancy, but I'd rather have a decent, practical "plain" knife in the 50 dollar range than spend a couple hundred for something fancy and artsy that's going to do the same job.
