I'm surprised noone mentioned Salmon Faverolles or Brahmas - Both typically lay a pink egg. My favorite Brahma girl, Cheesecake, lays a nice pink one with purple stipples and spots on it every day.
My silkie laid a pale pinkish egg. It just had the slightest blush of pink on it. She has a new home, and is probably setting on eggs now, the broody little monster.
What people call a pink egg is a brown egg with a sort of chalky layer on the outside of the egg that makes it look pinkish, but it really is just a brown egg.
I have never, ever, seen a truly pink egg.
If anyone really has, I would love to see a picture of it--I would like to be proven wrong, really, because I would like some, too--but at this point I don't believe in them.
