Well, I agree for the most part, you can experiment with the type of pepper, Datil works, Serrano or Longhorn is another good pepper, garlic of course. Easy on the salt though, and the pepper TBH many pepper the hell out of it, I don't want to taste your pepper, I want to taste the flavors of the meat already !!

Yup, spices should only ever compliment the meat NEVER overpower it! The rule of three is what I use depending on what I want, earthy=paprika, mildly spicy=cayenne, pungent=garlic, aromatic=rosemary.
