i'm pretty sure it's definitely better to have a foam shrimp and be surprised by the raspberry flavour than to have a foam raspberry and be surprised by the shrimp flavour!

That’s what I’m guessing. We have “Circus Peanuts” that are described as foam.

i don't think foam is the best choice of description for any foods.

Do you know the banana flavour sweets that are yellow and banana-shaped, and soft but not gummy like haribo? The shrimp "foam" is like those.

It's kind of like the non-licorice bits of dolly mix but slightly softer.

Not exactly but not miles off. The texture is a bit different.
