post your favorite egg recipes!!!!

I don't know what it's called but my girlfriend and I make it all the time when we are serving brunch get togethers.

a box of Mrs Cubisons cubed stuffing; poured into the bottom of a buttered casserole dish or cake pan

sprinkle your choice of meat on top; bacon, sausage, crab, ham, shrimp

mix up some eggs (at least 6) and milk like scrambled eggs. Sometimes I add a can of cream of mushroom soup too, but not always, you could use picante sauce too.

pour over the stuffing, sprinkle with grated cheese and bake at 350 for about 45 minutes.

You can also add veggies if you want.

I love this because you can make it up the night before, put it in the fridge and bake it in the morning.

Flan. We are getting a few more eggs than we can use and I just found a recipe calling for 10 yolks. Made it tonight and it was easier than expected.
Beat egg yolks, can of sweetend condensed milk, cup of milk for 3min. Melt 1c. sugar at low heat till carmelized and pour into glass pie plate. Pour egg mix on top and bake for 1hr at 350. Cool completely then invert onto plate. Sounds harder than it is. Very good.

Tonight I made fluffy tapioca pudding with duck eggs. I beat extra egg whites to make it super fluffy.

The big duck yolks really gave the pudding more color than usual.

Eggs Ranchero

4 tortillas
1/2 pound breakfast sausage
2 tablespoons oil
1/2 cup chopped onion
1 cup of Picante sauce
Salt and freshly ground pepper, to taste
8 eggs
1 tablespoon butter
Sour cream

Brown the sausage with the onions cooking until the onions are soft, set aside.

Wipe out the pan and heat the oil. Fry tortillas quickly in hot oil; drain on paper towel.

Warm the Picante sauce

Fry eggs in butter in separate pan.

To serve, cover each tortilla with a fourth of the onion-sausage mixture, place 2 eggs on each tortilla and cover with Picante sauce and a dollop of sour cream. Serve at once.

Farmer's Casserole

•3 C shredded potatoes (fresh or frozen) *I use Simply Potatoes from the stores refrigerator section
• 3/4 C or 3 oz. shredded Monterey Jack cheese with jalapeno peppers or shredded cheddar
• 1 C diced fully cooked ham or Canadian bacon( Hillshire Farms has pre-diced ham)
• 1/4 C sliced green onions (tops & all)
• 4 beaten eggs
• 1 1/2 C whole or 2% milk
• 1/4 t pepper
• 1/8 t salt (opt)

Grease a 2 quart pie plate or baking dish. (I like to serve it in a decorative pie plate so it can stay on the table)
Arrange potatoes evenly on the bottom.
Sprinkle with cheese, green onions and ham.
In a medium bowl combine eggs, milk, pepper, salt.
Pour over potato mixture.
Bake uncovered, in a 350° oven for 40-45 minutes or until center is done.
Let stand 5 minutes before cutting & serving.
Makes 6 servings.

Serve with fresh fruits & melons & Coll's soon to be famous Banana Bread.

My favorite is called

Eggs Goldenrod

Make a medium thick cream sauce ......(you can make as much as you need for how many people you have to eat)

2 T. butter (melt in saucepan)
2 T. flour (mix into butter when melted)
1 cup milk
add seasonings (I add just salt & pepper)

Stir until thick (this amt. I figure for one person)

Add sliced hard boiled whites to sauce
Take the yolks & run them through a fine sieve into a bowl

Make toast & put the white sauce with egg white on top of toast
Sprinkle the hard boiled yolks on top (Goldenrod)

This was always a special breakfast for birthdays & Christmas morning
