Poultry diseases that are transferable to humans?

Salmonella for sure. I am sure there are others but that's the main one I know of. I wouldn't worry about it, per se. Just wash your hands after handling chickens and eggs and chicken stuff. I always change clothes and have a shower after cleaning the coop. I don't wash my eggs either because that can actually increase your chances of getting it by transferring poopies from the outside of the shell into the egg since the shell is a permeable membrane. I keep the nesting boxes clean and make sure they don't sleep in them because they will then poop in them and it will get on the eggs. There are some diseases that rats can bring in and those are transferable to humans as well but again, good coop and personal hygiene habits should keep things under control.
 
What about getting staph infection from bumblefoot in the bird's feet? Is this something to worry about?

Haven't had to deal with that but I wouldn't worry about that unless you have an open wound and if I am dealing with an open wound on a bird I wear gloves for their protection as well as mine. Again, proper hand washing is key. You can get staph from finding a hair in your food at a restaurant. I would argue between my experience in food service and chicken keeping that eating out is more worrisome than chicken keeping lol.
