Maltose OH GOODY GOODY we are going to make Kefir beer~ Just kidding Maltose is a Malt Sugar used in Making Beer!!!! Why in the world you would want to use it in kefir is beside me and the one with eggshell or coral I am Guessing they are trying to leach the calcium and make it more calcium rich NOT SURE

Here is a website that tells about Maltose http://www.elmhurst.edu/~chm/vchembook/546maltose.html

Not to say I know about beer making or anything The Maltose is used to make barley malt which is one of the steps to making beer! OK so I do Know a little about beer making but if you drink enough of it sooner or later your gonna ask How is this stuff made!!

So question I have my cultures growing again and have found out that you really shouldnt use herbal teas to brew Kombucha but was wondering can you add things such as ginger to the mixture to enhance the flavors?? Not that it taste bad because it if far from that I think the taste is wonderful and love it but as with everything variety is the spice of life!!

Also has anyone seen what I would consider a double mushroom on the first batch! I did not seperate them but did see a seperation between the 2 different sections but went ahead and used this for my next batch as one!! Anyone seen this before~

Ernie,

Sometimes you will grow a double scoby. It will do what it wants. Separate or no. Your choice. I always separate because the scoby will get thick and I want more room for actual tea! I have flavored my with ginger. Yum! I would decant what I wanted then put a ginger teabag into it. I used to do this a lot. I would get a few bottles out of each tea bag. You could put a few slices of ginger in it. I always flavored before drinking and not before the fermentation process. You can also add juice before drinking. I have not added anything lately because I have grown to like it the was it is. But if I were to introduce it to someone else I probably would add some sort of flavoring(i.e. juice of some sort)
