Did you notice that it said to brine for an hour per pound and that brining longer can cause over seasoning? I have tried to tell people that putting the chicken into brine in a bag and the resting it for two days and then freezing was not the way to do it.
I have read several different things, its funny you called out on that! I googled and I see for different meats it calls for different brining options which of course makes more sense, tons of good recipes out there too!
