Pumpkin Pie from your fresh pumpkins

We are going to make our pie today!

Pumpkin pie made from your own pumpkin always tastes better than the store bought. I usually bake several small sugar pumpkins each year. I use a Victorio Food Mill to remove the stringy less than great stuff. I then place enough for 2 pies in zip lock freezer bags.
 
Scrape out the insides. Bake until tender, it should mash easily with a fork. I have never had a stringy pie pumpkin. If it is stringy after cooking it might indicate an older pumpkin. Use a stick blender or food processor to whip it up if you need to.

It is sort of like whipped potatoes are silkier than mashed. Same with pumpkin.
