Quail - Dispatching technique

So I just dispatched my few quails and though I was prepared from the research & videoes I had done;
1) Knock them unconscious
2) Behead them w/sharp scissors

The problem is that for the first step I expected them to instantly roll their eyes, but they didn't. Are they supposed to, or does it take a few seconds from the impact to their unconscious?

I freaked out and whacked another time so I don't know if there is a delay from impact to rolling of eyes... The second one rolled its eyes immediately, but also immediately started twitching so I probably hit too hard (which might not be a bad thing?)

Ringing their necks is the best way to dispatch.
 
I hold, my butcher partner cuts the head off, and then I do the rest. Currently (working on it) not physically strong enough to just do one snip for the head so I hold the bird still so they can do it.

Just have a bucket and going the head down at the bucket to catch the blood they'll flap a lot so hold their legs and wings tight

I do the same. I’m considering making a quail sized funnel so I can do it alone.
 
I haven't looked at the eyes, but they do go limp when I knock them out. Maybe it isn't needed but that's how I learned too. Yes, the twitching means it is dead.

I have weak hands so I use a cleaver. No assistance needed.

You do more harm wacking em.
