Quality cooking knives - looking for recommendations

Go to a good kitchen supply store and get what's right for your hand. They can help you find what balances correctly and works for you. They can show you how to take care of it and how to use it correctly. Keeping a knife sharp sharp SHARP is one of the keys to safe usage.

I've got a Henckels chefs knife that I use constantly. It works for me but might not fit your hand well. My grandma swears by a Santoku knife. I've never used one.

They cost an arm and a leg. But you get what you pay for. (Don't forget the "steel" to go with them.
If you can't afford a whole set, buy them one at a time as you can afford. The best investment a cook can ever make. (Other than a knife skills class)

Yes Santoku knives take a little getting used to but you'll never go back to chef knife.
