Question about different age pullets

I have been raising chickens for about three years and recently added newer pullets, ages about 16 and 8 weeks, to my small, established flock. So far, I've kept them separate by age or breed (or both) at night and during much of the day--except for allowing the newer babies and pullets access to the same fenced run. They are eating crumbles (non-medicated) exclusively but the larger pullets are eating leaf fall (willow) in the run and scratching for grit, etc. I do feed baby grit in with the crumbles but wanted to know when best to add scratch and/or leafy vegetables, like spinach, to their diets.

My laying hens include Aurcaunas, Buff Orpington, Wyandotte and Orange Comets while the younger flocks add in Rhode Island Reds, more Aurcaunas and Wyandottes (silver lacewing) and a Mauran (spelling?), the dark brown egg layer. There are roos among the babies, from their crowing, and I may have to rehome one.
