They're color filters used in photo printing. dichroic enlarger allows you to take film negative and enlarge/print it into a color print (you can also do black and white and use the same enlarger to emphasize different grey tones for effect). Color process printing (like inkjet printers) has really reduced the uses for dichroic enlargers to specialty print houses these days, but they're still in use.

If you ever got color prints from film at a photo center like at a walmart/cvs drugs, etc you've seen the end product.

I don't think I've ever used a film camera like that.

I do know there are old photos stored somewhere around here so I probably have seen the end product.

Here/Sonora it's taquitos/rolled tacos if corn tortilla, flautas if flour. Flautas are usually a little larger too.
