Question on Local Honey

    Just found some today! How should I store it? in the fridge? pantry?

    Honey doesn't go bad. Just keep it in the pantry. Local honey is great for anyone with allergies since the bees use the pollen in the area to make their honey. It helps give you a bit of immunity to whichever pollen is in the honey.

    It will crystalize quickly in refrigerator so definitely keep in pantry. I just got some local honey last weekend, I think it tastes rich, but could be just me. If it crystalizes just gently heat bottle like in near boiling water, it takes time, then good as new.

    what does honey run in everyone's neck of the woods?

    i've never purchased it before (fresh/raw), so have no clue what it goes for

    also, the crystals- is it okay to use the honey when there are crystals in the container? i'm not asking if they're bad for you, but i'm not sure how to phrase what i'm trying to say.....

    when crystals form, is it concentrating the rest of the honey? kind of like when water freezes and forms ice before other liquids with a lower freezing point, so that when you take out the ice you have a more concentrated substance?

    just curious. if i used all the liquid honey, and then melted the crystals down, would it be the same as the honey i used?

    I think it's the opposite of your ice analogy. The crystals are crystalized sugar, almost pure glucose.

    so, it would actually be making the honey LESS sweet, but maybe concentrating the flavor? (not saying it would be noticably different, but in effect...)

    i would like to get bees someday, but it won't be anytime while my wife is alive (which will hopefully be a long time) she is scared to death of bees, swears every bee within a half mile of her seeks her out. makes it clear every time i mention thinking the whole honey thing is cool and interesting, that there is no way on God's green earth we are getting bees [​IMG]

    Should be able to heat the honey and melt the crystals....just stir it well and the honey should be back to regular texture. We usually set in like a double boiler over and in hot water so it doesnt do anything to the container, but I know a few people who microwave it and watch it carefully.

    Honey can be heated if it crystalizd over boiling water, double boiler, never put it in a microwave it kills the vitamins (and other good stuff that's in the honey) in the honey.
