Does anyone have a quick throw together quiche recipe?

What I would like to do is make a pot-pie crust, and make tiny little quiche's in a muffin pan - my kids LOVE little things like that.... and I have 14 eggs on the counter just waiting for something exciting!

Custard sounds WAY too difficult - like Yogurt and cheese

Funny how kids are like that.... with little things to eat all special for them. You should see my kiddies with bantam eggs

I know a recipe for "chile relleno casserole" but I doubt your kids will like that.

I have no idea how to make quiche though...

Sorry...I feel like I should be doing something but, I don't know what?

I've already prepared the brooder area for the chicks coming tomorrow (I hope!) and cleaned all their stuff, TWICE! Nope. Nothing else to do. Just rob threads here on BYC.

I'll be fine after tomorrow...I hope!

See quiche has cheese - and ANYTHING with cheese in this house is as good as GONE.

(I think the chickens get the whole CHEESE adiction from my kids!

I actually make a little goodie bag for the chickens each day - cuttings and what-nots from dinner and lunch. And this evening I threw in a handful of cheese cause there wasn't much in there.

My daughter wanted to "try" it - never mind it was mixed in with bread crusts and apple cuttings - she just wanted that dang cheese@!

I'm glad he kept it a secret, he had to wait for the post office to open - and well, I would have broken down the door.

OH good! Here's the recipe for anyone else that might want it:

Chile Relleno Casserole

Ingredients:

27oz can of whole green chiles or 6 - 8 roasted and peeled green chiles, split in half.
1 cup pepper jack or mozzarella cheese
3 egg whites
¼ teaspoon cream of tarter (optional)
¼ cup 1% milk
¼ cup all-purpose flour
3 egg yolks (you can use a whole egg instead of all that many egg yolks...but, I don't)

Directions:

1. Preheat oven to 350°.
2. Coat bottom and sides of 8-inch square glass baking pan with cooking spray.
3. Line bottom of pan with half the can of green chiles or 3 -4 green chiles.
4. Sprinkle ½ cup of cheese on top.
5. Using electric mixer, beat egg whites with cream of tarter on high until stiff peaks form. Set aside.
6. In a medium bowl, combine milk with flour, stirring until smooth. Add egg yolks and blend well.
7. Fold the beaten egg whites into the flour/milk mixture until well combined. Do not beat.
8. Pour half of the egg white and flour mixture into the pan and spread evenly.
9. Place remaining chile on top and sprinkle with remaining cheese.
10. Pour remaining egg white mixture on top and spread until evenly covered.
11. Bake in preheated oven until tops in golden brown and eggs are set and reach an internal temperature of at least 160°F (about 25 minutes).
12. Remove from oven and let stand 5 minutes. Cut into 4 squares

You can make this a day in advance and put in cooler for following day! I usually make Chile Relleno Burritos...SO GOOD!



PS I meant to say if you want to add meat to it you can. Cook the meat (Hamburger/sausage combined) separate. Then spread it out on top of the cheese layers. I never tried that...

Someone remind me tomorrow and I'll post my Kitchen Sink Quiche recipe. Kitchen sink, as in everything but.
