yeah the humidity is always at 50% all the time, and when you need to add water it will make a beeping sound, and you will have to add water, i only add water about 3-4 times in the 21 days it takes for them to hatch, and when you add water to it,,,,,, it will stop beeping and the humidity mark will show a drop of water, that represents that the incubator does not need any water

i do like your coleman-bator, my incubator is also a coleman, i think ours are the same,,, but if i were you i would suggest that you get your thermostat, and mount it to the wire that is to keep the chicks from the light source, and make sure that the back of the thermostat is facing the lightbulb,,,,,,,,,,,,,,,,,, or something else, but you will want to make sure that you get the back of the thermostat atleast mounted 2 to 3 inches from the light bulb, in the spot it is at now, you would get a lot of fluctuation going on
