Recipe for disaster........peeling a fresh boiled egg!!

My grandmother always told me to use my oldest eggs if I was going to peel them. That seems to work. I can't peel a very fresh egg either!!!

This is the real deal. I either 'aged' my eggs before Easter or if I knew I was going to make potato salad or deviled eggs for a pick-nik or suffered with raggedy eggs for years till I read that thread.
 

Here's one way to cleanly peel your eggs using eggs straight from the coop:

Bring your water to a full boil.

Add a tablespoon of salt.

Ladle your eggs carefully into boiling water.

Boil for 15-18 minutes, depending on how you like your eggs.

Let ice cold mountain water run over your eggs.
Empty your pan a couple of times and then let them sit in the icy water for 15 minutes.
If I was at my shop in the village I'd add ice to the water to get it cold enough.

And they just slip right out of the shell!
 
I told my wife about it and she said, then go ahead and you do it..

so I took all the freshest eggs right down to getting a couple from the coop.

started the water boiling added enough salt to where I figured it would be too salty to drink if the water was cool..

took my favorite knife and poked a tiny hole in the air pocket end of the egg.. lowered the eggs into the water with a large spoon. cooked them for 15 minutes..Probably10 minutes would have been long enough..

drained the eggs and just ran cold water over them for awhile until they were cool..

they all peeled super easy..and clean.. I am a hero in my wife's eye
