Ok, Here we go... Chicken Piccata but to kick it up a notch, I'll add a bit of red pepper flake and its really good if you substitute chicken with gator tenderloin.

Edited to add: I serve it over a buttered pasta, the gravy is awesome.

I'll try it next weekend, but may substitute chicken for rabbit. For me, gator is pretty and clean meat but lacks flavor.

Rabbit is a fine choice.

I've never had spatzels before. The recipe had me at dumplings. Do I need the spatzel maker?

I had a few bumps over the last few weekends and didn't have the time to try the piccata, but I'm going to give it a go today or tomorrow.

I'm going to use chicken because I have not had time to get with my neighbor to get some rabbit. I'll let you know how it comes out.

For future reference, how do you think venison would work for this recipe? That's my favorite meat and we've always got it on hand.

I am Cajun and live in Cajun country so I get plenty of cajun and creole food. I am really enjoying the non-Cajun recipes!
