Red beet eggs

i know this is probably on here somewhere, but I was NEVER a fan of red beet eggs as a kid (I hate beets!) And my husband was devouring some store bought RBE's last night and he made me taste one since I never actually had one...just beets. Well I still dont like beets, but I am in LOVE with RBEs!!! :-D So since our girls should start laying in about two months....I want to be a pro at making them by then :) Any help?

I hate hard boiled eggs... YUCK.

And as a kid I used to "hate" beets, I told folks I was allergic to them so they would leave me alone. Then one day I ate some borscht at a dinner party and was floored how good it (and beets) were...

When I make pickled eggs, I make mine sour. Some people like thiers real sweet. I use vineagar in mine. No sugar added.........
 
Here's another:

PA Dutch red beet eggs

Although my aunties used to leave the eggs soak in the beetjuice stuff for about a week before eating them, and they would put sliced onions in there, too. I would say that part is optional, as these are the same aunties who used to eat liverwurst-and-limburger sandwiches.

Ive loved pickled eggs since i was little! Now im going to have to decide which recipe to try!
