refrigerated eggs different from 'counter' eggs

wasn't sure where to ask this question but I've noticed that eggs stored on the counter empty completely when opened vs. those in the refrigerator where the whites kind of stick in the shell and have to be scraped out. Neither are washed so what makes the difference?? Is quality affected at all? Sorry if this is not the place but I couldn't find where to ask a question.

This isn't an exact answer to your question, but..
I store my fresh eggs (unwashed) on the counter for up to a month.
If I'm making deviled eggs, I wash them and place them in the refrigerator for around three weeks.
It's probably "all in my head" but I feel like a month old egg from the counter, still tastes fresher than a month old refrigerated egg.
 
Hi, Welcome to BYC! Any fresh eggs are hard to peel the shell off the whites. The eggs you buy in the store that peel easy have been stored for long periods in cool conditions, some 6 months or more. Over long periods of storage the inner membrane separates due to drying, this causes the egg to peal easy. I don't know if this is what you are speaking of.
