Did they all eat anything new lately? I know it's an Ameraucana (bearded), but the bulge in the throat looks a little odd and she's throwing her head like she's trying to dislodge something. It could be what's referred to as Stridor (breathing), which can be caused by an obstruction or disease.

That sounds like sneezing. They will stretch out their necks when sneezing. Have you seen any other symptoms in the sick birds, such as bubbles in eyes, swelling around an eye or the face, nasal drainage, gaping, or a bad odor?

There are a number of respiratory diseases in chickens, such as infectious bronchitis, mycoplasma gallisepticum (MG,) coryza, ILT, and others. Those include viruses and bacterial infections. Mold fungus can cause aspergillosis. Depending on the symptoms, some are more severe than others. Have you used any medicines to treat the chickens?

If you are in the US, you can send a body to the state vet for a necropsy, to find out what they have. Here is a list of state vets:
