I've used this recipe for spare ribs - not country ribs. Depending on the quality of the ribs, you cook (boil) them longer or shorter.

ETA: The old way I USED to make ribs is grill them on the BBQ till browned then mix 1 bottle of quality BBQ sauce and 1 bottle of beer. Place ribs in shallow pan and cover with sauce. Seal pan with foil and bake for +2 hours at 350*.

This is a topic like dog feeding and politics. A bunch of good and bad reviews regarding people say to par boil some say don't boil. I think for one you can't get more tender ribs then pork and the best flavor. I cooked them on about 200 degrees for about 2 hours in the oven most amazing ribs my family has every had. We did not par boil them first. I did use a dry rub. My own mix of spices and tons of brown sugar.
 
Low and slow.

Low heat for at least ten hours.
I am smoking over a hundred pounds of pork shoulder and turkey breast this week for our big Okies in the BYC get together on Saturday.

But, it's going to have to wait. I have ribs to cook today! I'll get the smoker soon, I'm sure.

I decided to do a rub, and make do with what I have. I have a container of Barbecue Seasoning; might as well use it. I mixed it with brown sugar. I dried the slab off with paper towels and then rubbed it down with Liquid Smoke. I rubbed in the sugar mix, wrapped the slab in foil, and have it resting on a baking sheet. I'll start my sauce in a few (I have a recipe we like). I'll stuff the wrapped ribs in a low oven for a bit. I'm undecided if I should use the sauce in the oven for the last little while or do it on the grill.

I think I took a bit from each suggestion. What do you think? I have time beyond the rub for other ideas on how to cook, besides smoking, since I don't have a smoker and the smoker thingie that came with the grill sucks.

I'm making slow cooked beans to go with the ribs. Awesome recipe from A Year of Slow Cooking:

"POT LUCK BEANS SLOW COOKER RECIPE
1 lb. lean ground beef; browned and drained.
1 lb. smoked bacon; chopped, browned and drained.
1 med. onion; diced and browned.
1 cup ketchup.
1/4 cup brown sugar.
1 30 oz. can Pork n' Beans.
1 15 oz. can kidney beans; drained and rinsed.
1 15 oz. can butter beans; drained and rinsed (I've used cannelini beans).
1 tbs. liquid smoke.

Use a large crock pot.

As you're browning your meat, bacon and onion add the rest of your ingredients to the crock pot.

Stir the hot ingredients into the crock pot.

Cover and cook on low 8-10 hours."

I've typed the recipe myself, rather than cutting and pasting, but that's the recipe. It is reeeeeally good, and I will totally use it this summer when we have company for barbecues.
