I am just wondering if you accidentally ruptured the intestine to the cloaca? If you get the fecal matter on the carcass it causes a nasty taste. Just a thought that causes me to wonder. But if that is the not the case, then you can disregard this.

However, when we butcher our birds, we salt them and wash in lemon. Then we rinse and start cooking with Asian spices, garlic, and ginger in the pressure cooker. Yummy!

Madden hosted CBS and then FOX Thanksgiving football games and as part of his tongue in cheek style gave out DRUMSTICK AWARDS to the best offensive and defensive players of that year's game. The hoot was he had the network chefs tack on a bunch of turkey drumsticks to a bird and roast it up so the turkey had 8 drumsticks (all to be handed out).

And I have a link (below) to an excellent article about cooking traditional vs. current store bought chicken. The flavor is definitely different, and it is not as tender -- or mushy, depending on your viewpoint. I ate yard birds as a child, but as an older adult, after years of store bought birds, the roos tasted odd. Not bad, but quite different. Took me a few meals to get accustomed to the difference. Last one I ate was just the other day and it was delicious, cooked for about 3.5 hours over charcoal at 200 degrees. We'd also done one in a clay cooker (roaster) that was delicious, recently.

You can eat a rooster.I eats them all the time.

Why eat a hen? they lay eggs,they are working girls.Only eat a hen if they dont lay eggs,but that also might be a sickness.Why eat a sick hen?

You have extra roos? eat 'em.They still taste like chicken.

Maybe you punctured the stomach,or gall,or the bladder or colon. You have got to be careful and pull all that schmere out in one piece or it will ruin it.

One of my favorite novels, THE YEARLING, took place after the Civil War. Besides being a great children's story there is a lot of detail on everyday farm life (what we'd call a farm these days was just every day living). The food they grew and prepared was really interesting. If you have young kids it makes a great book to read to them.

You're welcome, but another BYCer deserves the credit, and I don't even remember who it was.

I'm quite familiar with The Yearling. They made a very good movie out of it, too, years and years ago.​
 
I 'rested' mine in the fridge for 5-7 days, per a BYC'er, then roasted some & froze the rest. One Orp was Turkey sized & we had him for Thanksgiving.
Yummy!

My trouble is, I have to get psyched up to process again, lol, as if I'd never done it. Next time will be my 3rd
