i have some 10-11 week old cornish xes and i was wondering when they would start crowing if they do crow because i heard that that makes the meat all bad and tough

Typically they are processed between 6-8 weeks. The crowing itself does not cause the meat to get tough. The crowing and the tough meat are a result from hormones as they approach maturity. You can stop this in 2 ways, Caponization or Processing.
