Rooster or Hen?

I'm looking for one known for being calm (although all roosters have the hormones) And maybe a heritage breed. Pretty feathers are nice too.

We have all heritage breeds. Of the males we’ve had, the Dark brown leghorn males were very pretty, but wouldn’t shut up...all day long. The Marans were aggressive and hormonal -got rid of them as cockerels. The Australorp was ok, but decided to try to dominate the kid, so we got rid of him. We had an accidental EE male that never crowed by the time we got rid of him as a cockerel (maybe hadn’t quite hit full on puberty), and we had an Ameraucana male that was also pretty relaxed, but got rid of him around 5 months -no room and all black. Others will have suggestions too. But, the males will vary even within a breed, so could get a jerk from a “calm” breed. Good luck.
 
ok well. EXITING news they were both in the nest box and layed their first eggs today! So both pullets. I would like to add a rooster to my old/young flock soon. And I'm thinking Salmon Faverolles are good friendly rooster breed. Any other suggestions for good rooster breeds?
Nice way of knowing their sex, an expert will know right away since they hatch(i'm still wondering how they do that).

Looks like it has a rose comb so I think its a Dominic.
Dominics can be gendered like barred rocks.
Google how to gender barred rocks.
Males have solid yellow legs.
Females have yellow legs with a black wash on the front side of their legs.
Also males are lighter colored than females.
