It is not zoonotic meaning it doesn't pass to humans. I know the eggs are safe to eat from layers during an outbreak and I presume the same for meat...

I also try not to waste a life or meat if possible. I process after accidents or even predator attack if that's a viable option.
ETA: I would not feed the offal back to my other poultry animals if the stags were still currently infected at time of processing.
Yes, they are safe to eat, so are eggs from hens.
