Sally's GF3 thread

Yesterday, I made yogurt in my Instant Pot. This site is where I got the information about doing it.
https://www.thekitchn.com/instant-pot-yogurt-267450

I did the prep of heating the milk to 182°F in a pot on the stove, and then cooling it to 110° in a sink of cold water before putting it in the IP.

I used a gallon of 1% milk, and added a cup of honey and a couple teaspoons of vanilla. I incubated it for 9 hours, drained it in mesh bags for 1 hour, and I have the best yogurt I've made in a looooong time! This will be my go to method from now on.

I'm pretty sure the reason this has turned out well is because the IP can keep a constant incubation temperature. My method before was to incubate in quart jars in a box lined with towels. Sometimes -- like all the time, recently! -- the yogurt was thinner and runnier, and I'd bet this was because it cooled too much for the bacteria to do its thing. The last time I did it this way, it was just about too runny to drain in the mesh bags I have.
I make yogurt in my instant pot all of the time. I also have a yogurt strainer to make it into Greek yogurt after. Doesn't your IP have a yogurt setting? I never heat it before hand, turns out perfect every time. I've not tried adding my honey before incubation, might have to try that.

since you have the yogurt perfected, consider making some cheese with it. Its similar, ,creamy,, but more firm.

I also have a yogurt strainer to make it into Greek yogurt after.
I need one of these! Do you have a link, or picture? The mesh bags I use work, but... my least favorite part of making yogurt is washing the bags in the sink afterward.

I can't wash them in the laundry; they would have dog hair woven into them.

This is what I have. I bought the one with the stainless steel mesh. The plastic one is cheaper, but I felt the stainless would be more durable. I wish the container was glass.

An appropriate song for today. Abbreviated version.

Happy solstice! Happy solstice! Happy solstice!
Happy solstice! Happy solstice! Happy solstice!

For now the short days will start to lengthen!
Happy solstice! Happy solstice! Happy solstice!
Happy solstice! Happy solstice! Happy solstice!

Longer days! And shorter nights!
Happy solstice! Happy solstice! Happy solstice!
Happy solstice! Happy solstice! Happy solstice!

(Etc.)

My thanks to G.F. Handel for the original.

If you go to a live performance of Handel's Messiah, what do you do during the Hallelujah Chorus?

Do you know why?
Traditionally, everyone in the audience stands during the Hallelujah Chorus. You can tell the "first timers;" they look a little confused.

The story behind it is that the king stood the first time he heard it, and if the king stands, everyone stands. I've read that the story is ... possibly a myth.

I did have to look up this title. Did have an idea,, but not details,,,,, so I did find ,,, that I can watch a version on YouTube. It is free to watch for me, so I'm OK with it. My understanding,, is ,,, some of these long versions on YouTube have commercials. That doesn't bother me. I can also hook up my TV (larger screen compared to monitor) to my computer. Only thing that does happen in my case,, ,,,, Sound comes out of the computer speakers. Again,,,,, not an issue. :highfive:

When I make yogurt, I want to make a lot. I make a gallon at a time.:)

If you drain it, you lose about half the volume. Don't dump out the whey! I use it in place of water when I make the chickens' mash snack, and to cook rice (also in my Instant Pot).

If I had to pick just one small kitchen appliance, it would be my IP. It's very versatile.
It sure is versatile! How long does that much yogurt keep in the fridge?

I've never had yogurt go bad in the fridge. The only time I saw moldy yogurt was in the fridge at work. It was an opened container of store bought yogurt, waaaaaay in the back. The name written on it was someone who didn't work there anymore. :lau

Seriously, I don't let yogurt sit around long enough to go bad. Out of a gallon of milk, I'll get about half a gallon of yogurt, which I put into pint canning jars. I save a cup(ish) for the next batch.

I store the drained out whey in quart jars. I use about 3 cups to cook a batch of rice, and the rest I use to make the chickens' mash snack. If I make a loaf of GF bread, I'll use it in that.
