Sand vs Pine Shavings

"The Dosage is the Poison"
Old medical adage. Credited to Paracelsus, approx 1500 CE.

'Alle Ding sind Gift und nichts ohn' Gift; allein die Dosis macht, das ein Ding kein Gift ist.

Translation, "All things are poison and nothing (is) without poison; only the dose makes that a thing is no poison."

This is true tho. You can overdose on vitamins, water, etc. everything in moderation.

The good news, such as it is, is that a well designed coop has plenty of ventilation to assist in moving moist, ammonia laden air out and fresh air in. That means its also moving VOC and VVOC contaminated air from wood shavings, whatever, out and fresh air in.

Another reason to build a coop with lots of ventilation (and not out of cedar shakes!)

Actually most cedar construction materials are not made from the aromatic variety of cedar and thus are fine for coop building. Good in fact, both rot and insect resistant.
good to know!

Personally, I'd just use the hardieboard looks like cedar shakes, if I cared about appearances - but you know me, I'm fond of that stuff.
