I like a grilled cheese, but i like it on extra sour rye, and after I butter the bread I press shredded real parmesean cheese into the buttered sides, lay the bottom slice buttered/parmesean side down to the hot skillet, lay on the cheese, cheese, top slice butter/parmesean side up, and let the bottom side get deep golden crispy before you turn it, and really crisp up the other side after you flip it, and MAN that's a grilled cheese sandwich!
