Santoku knives---a good knife?

for christmas every year i give my daughter a knife. last year it was hencles 8" chefs knife.. about 90.00 .. they are very nice to have
 
I have a comparatively inexpensive set from Wolfgang Puck. Nice weight to them. They can slice paper thin pieces and, if I'm not careful, they can slice paper thin pieces of me. I've been known to cut something while cooking in the kitchen, leave the room, and notice later that I'm leaving rust colored marks on things that I handle. In spite of that, they are my favorite knives.

I can cut through tough cartilige and slice tomatoes with the same knife. What's not to like?
