SHARE YOUR BEST VENISON RECIPES PLEASE!

my dh and i were shopping at the bass pro shop and they had this book for sale "the complete venison cookbook by harold w webster, jr" it has some yummy recipes in it (419 pages!)

here is one i twicked it a little for the spices i had but it is a cooking method that makes it so tender:

venison steaks cut 3/4 think
slices of bacon
2 tbsp all purpose flour
2 tbsp butter
1 cup of burgundy wine (i used red wine, already had it)
1 tsp sage
1 tsp celery salt
1/2 tsp thyme
1/8 tsp cayenne pepper

(i used worchester sauce, black pepper, tony chachere's, dash of red pepper, did not have the other spices listed above)

wrap each steak with bacon and secure with a toothpick. mix flour and dry seasonings together. dredge meat in flour mixture. melt butter in heavy skillet, quickly brown the steaks on all sides. remove steaks. add wine and worchester sauce to pan, scrap any bits off the bottom of pan. simmer, sauce will thicken some as it cooks and add meat back to sauce and simmer with lid on till the doneness you like. so yummy!!!
